Turkey Brests with Garlic
Ingredients
2-3 garlic cloves, crushed
1 teaspoon each of chopped fresh oregano and basil
1 teaspoon of finely chopped fresh parsley
1 egg white
1 teaspoon cooking sherry ( or brandy)
Flour
4 turkey breasts
Olive oil for frying
Salt and freshly ground black pepper
Place the garlic in a glass or china bowl ( not metal) . Add the oregano, basil and parsley.
Add the egg white and sherry. Stir well. Add flour to make a batter-type mix and season to taste.
Place the turkey breasts in the mixture for 1 hour, making sure they are thoroughly coated. Turn regularly. Shallow – fry each side for 5 minutes in the oil until golden brown.
Take out of the pan, put back in the mixture for a second coat and grill for 10 minutes.
Serve with fresh green salad and garlic bread.
