Stir-fried Mushrooms
Serves 4
Ingredients
1 garlic clove, cut in half
small piece root ginger ( about 15 mm/ 1/2 inch long )
60 ml ( 4 tablespoons ) olive oil
1 onion, finely sliced
1 small leek, finely sliced
175 g ( 10oz ) small mushrooms
pinch of salt
1 teaspoon soy sauce
Place the garlic pieces and ginger in a wok or frying pan with the oil
and cook, stirring occasionally, for 1 - 1 1/2 minutes.
Remove the ginger and garlic ( or you can leave the garlic in the pan, if
you prefer) , add the onion and leek and fry for another 1 - 2 minutes.
Add the mushrooms and fry for another 2 minutes.
Sprinkle over the salt , followed by the soy sauce.
Serve with noodles or Basmati rice
