Chinese Style Prawns with Garlic and Ginger
Ingredients for two persons
- 2 large cloves of fresh garlic pressed
- 1 ounce of fresh ginger root peeled and cut into fine strips (matchstick size is best ).
- 2 shallots finely chopped.
- 1 teaspoonful of chopped fresh parsley.
- 12 large prawns with shells removed
- 4 ounces bean sprouts
- Natural yoghurt or a little cream
- Butter, black pepper, salt and a little caster sugar.
Firstly heat the oil to simmer in a wok or large non-stick frying pan. Then add the shallots together with the garlic and ginger cooking gently until the shallots are beginning to brown.
Then add the prawns and parsley, cooking carefully for another five minutes, then adds a knob of butter and the bean sprouts turning up the heat a little. Cook for a further five minutes adding sugar, salt and pepper to taste immediately before serving. A little sour cream or natural yoghurt may also be added by stirring into the mixture as soon as cooking has finished.
Good when served with crispy noodles and hot crusty bread.
